COUSCOUS, ROQUETTE AND WALNUT SALAD
MOROCCAN RAS EL HANOUT - EXTRA RECIPE
1 cup Couscous
1/2 tblsp Red Hill Spice Girls Moroccan Ras el Hanout
Lrg handful of Roquette
1/3 cup toasted chopped Walnuts
1/3 cup chopped Semi-dried Tomatoes
1 small Spanish onion finely diced
1 400g tin of Chickpeas drained and rinsed
2 tblsp chopped mint
2 tblsp chopped coriander
Dressing
60ml walnut or olive oil
1 clove of garlic squished with salt
Juice of one lemon
Prepare 1 cup of couscous as per instructions on pack adding 1/2 tblsp of Moroccan Ras el Hanout. Toss with all ingredients and add dressing just before serving.
