RICE WITH LENTILS AND CARAMELISED ONIONS

MUMBAI - EXTRA RECIPE

5 cups chicken or vegetable stock
1.5 cups split red lentils
1 cup basmati rice
40g butter
2 large onions, sliced thinly
2 tbs brown sugar
2 tbs Red Hill Spice Girls Mumbai Curry blend
Small handful of parsley chopped

Bring stock to the boil and add lentils and rice, stir and simmer with lid off until most liquid has gone (about 15mins).

Melt butter in frypan, add onion and sugar, and cook until caramelised. Add spice and cook until fragrant.

Take off the heat and allow to rest with the lid on for 5-10 minutes. Stir in spiced onion and parsley and serve.
